Gildoro should be eaten at room temperature to appreciate its unmistakable flavour. Enjoyed on its own, it is a fine table cheese and goes well with pears, figs, walnuts and grapes; it can be used to enrich sauces and creams and is a tasty ingredient for an infinite number of gastronomic preparations, from starters to first courses and at the end of the meal.
