Storico, one of the symbols of Valtellina's cheese production, takes its name from the stream that flows in the province of Sondrio between the Gerola and Albaredo valleys, where the historic centre of its production is located.
It is a famous and valuable cheese produced exclusively during the summer season in the mountain pastures of these valleys, at an altitude ranging from 1400 to 2000 meters.
The mountain farmers of the Consorzio Bitto Storico play a fundamental role in preserving the environment and alpine biodiversity and maintain a series of traditional practices that enhance the quality of this cheese.
- the rearing, together with the cattle herd, of a few Orobica goats, which provide around 10-20% of the milk used to produce Storico cheese
- hand milking to ensure maximum control of the cattle's health conditions.
A semi-cooked ripened cheese produced in the mountain pastures from freshly milked whole cow's milk, added to goat's milk (10-20%).
The Storico 2 years has a very intense and almost spicy taste, the paste becomes very compact and almost crumbly, excellent accompanied by a full-bodied wine from Valtellina.
