Bresaola is a highly selected product and the tip of the hip is the most prized cut of the leg of beef.
Valtellina bresaola is a very nutritious cured meat, low in fat, rich in protein, iron and mineral salts.
This is why it is often included in slimming diets and in the diets of sportsmen and women.
The processing is carried out with the addition of minimal amounts of salt and natural flavourings.
Followed by a maturing period of 4 to 8 weeks in the dry climate of the high mountains, which gives the product its unmistakable characteristics.
