Lardo is the result of processing the fat from the back of the pig, dividing it into regular pieces and "massaging" it with a mixture of salt, spices and herbs.
It is used both to add flavour to food and raw, cut into fillets as an appetiser.
Ingredients: pork lard, salt, natural flavourings, spices. Preservatives: E252.
