Preparation for sciatt.
Ingredients: buckwheat flour 70%, wheat flour type "00", egg white powder, thickeners (carrageenan, xanthan, guar gum).
Ingredients for 5 persons: 1 package of mixture, 300 g water, 200 g semi-fat cheese, we recommend young VALTELLINA CASERA DOP, salt to taste, oil for frying.
Preparation: place the mixture in a bowl, add the water and salt.
Work until the mixture is not too soft.
Cut the cheese into small cubes of about 1.5 cm per side and dip them into the batter.
In the meantime, heat the oil to a temperature of 175 / 180°.
With a spoon, scoop out one cheese cube at a time, making sure it is well coated in the batter, and drop it into the hot oil.
Gently brown the sciatt in the oil and drain with a skimmer, placing them on a sheet of absorbent paper towels.
Serve piping hot, accompanied by thinly sliced fresh chicory.
They are also excellent when heated in a traditional oven at 220 / 240°.
