Bitto DOP cheese is made from cow's milk, with 10% goat's milk, rennet and salt added.
The cheese is compact and golden yellow in colour.
The cheese has a strong, aromatic flavour.
The Bitto DOP together with the Casera Valtellina DOP 12 months è suitable for the preparation of pizzoccheri.
